Hanwoo jjak galbi, butchered in-house. The ageing room and the butchery case sit along the corridor, not behind a wall.

HOHWA is the second brand from Sootymoon, the Korean fine-dining restaurant in Yeouido. It is a premium dining room built around Hanwoo and Korean cooking, bringing modern technique and presentation to traditional flavours so that the meal and the room are enjoyed together.

More than ten cuts from a single Hanwoo steer are drawn into one course. The jjak galbi that goes on the grill is butchered in the restaurant. Expressing the character of each individual cut — that is how HOHWA approaches Korean BBQ.
